Sping has arrived in Kansas

I made potato salad today. Six medium potatoes and 4 eggs in a pot. Add enough water to cover and a teaspoon of salt. Boil for 20 minutes then rinse and cool. Peel the skin off the potatoes and cut in quarters and while holding them together, slice. Peel the eggs, quarter and slice. Dice up half a medium size onion. Add some ground black pepper, mustard and miracle whip. Mix up, cover and cool.

Now at 2:30 take a rack of pork spareribs and peel the skin membrane off the back side. Cut the rack in half. Place in a good size pot and partially cover with water. Add some steak spice and Montreal steak spice and a little lemon pepper. Boil for about 15 minutes and take the piece on the bottom and put it on top and the top piece on the bottom and boil another 10 minutes. Have the oven on 350 and place the ribs in an aluminum pan, add the liquid and cover with aluminum foil. In the oven about 3 PM. Soak some mesquite and hickory chips in water for about 30 minutes then drain and place in an aluminum pie plate.

About 5:30 remove from the oven and drain most of the juice off. Leave a cup or two. Have your gas grill hot and leave one side on high with the plate of wood chips on the lower rack. Add your favorite barbecue sauce, KC Masterpiece, to the ribs leaving then in the same container. Now place them on the upper rack of the grill with one side of the grill on low. Open an ice cold Corona and watch the smoke rise from the grill. After its gone open another Corona and enjoy. Watch the birds come into the feeders and for water. Listen to their beautiful songs. Get a small can of Bush beans, open and place on bottom rack of grill. Open another Corona. Bring out the potato salad, plates, forks and napkins. Take the ribs and beans out of the grill and savor the wonderful aromas. Oh what a treat. Now eat what you can and save the rest for another evening.
